Beer - Cheese Soup

Saute until onion is translucent and flour is golden.  Mash onion with a fork.

1 TSBP garlic

1/2 stick butter

1/2 med sweet, yellow onion, diced small

2 TBSP flour

 

Add and bring to a boil.  Boil about 5 minutes.

1 beer (dark is better, but light is ok)

1 can chicken broth

 

Add and reduce heat.  Simmer until melted and mixed well.

1 small container of heavy cream

4 cups of shredded, sharp cheddar cheese
