Goody Girl Potatoes

1 package Zatarain's crab boil

3 lbs red potatoes, cut/sliced

1 lb thick cut bacon, diced

1 cup red onion, diced

1 TBSP minced garlic

1/4 lb butter

1/4 finely shredded Cheddar cheese

1+ green onion, chopped 

1/2 tsp cayenne pepper

1/2 teaspoon paprika

salt and pepper

3/4 cup sour cream

 

Bring water and crab boil to a boil and add potatoes cooking until fork tender, drain.

Cook bacon until crispy, drain.

Carmelize the red onion in the bacon grease, adding garlic when almost done.

Mix the butter, cooked onions, seasonings, sour cream and half of each: cheese, bacon bits, and green onion.  

Add potatoes, let stand.  When cheese starts to melt, fold together carefully. 

Top with remaing cheese, green onions and bacon bits.   


Spaghetti Salad

Toss together:

1 box spaghetti noodles, cooked and drained

2 TBSP olive oil

1 1/2 cup roasted red pepper italian dressing

1/2 cup chopped red onion

1/2 chopped tomato

1/2 bunch chopped fresh cilantro

salt/pepper


Colorful Pesto Potato Salad

Toss Gently:

2 lbs small red potatoes, cooked whole with skins on.  After cooled, cut in half or quarter.      

1 cup snow peas, cut in half, blanched in boiling water for 1 minute, then rinsed in cold water. 

3/4 cup red onion, chopped

3/4 cup red bell pepper, chopped

3/4 cup green bell pepper, chopped

1/2 cup corn

2 green onions, chopped

2/3 cup pesto with an extra 2 TBSP olive oil added to thin

2 TBSP pine nuts, toasted

2 TBSP lemon juice

Best served immediately at room temperature.


Memphis Corn Pudding

1 box Jiffy corn muffin mix

1 16 oz can whole kernal corn- DON'T DRAIN

1 16 oz can cream corn

1 cup sour cream

1 stick margarine, melted

3 eggs

3/4 tsp salt

Mix all ingredients until blended.  Pour into 1 2 quart or 2 1 quart baking dishes.  Bake uncovered at 350 degrees for 45-50 minutes or until lightly browned and set.
